Mac and Cheese Grilled Cheese

Where absolutely everything, from the bread, to the filling, is mac and cheese!

Ingredients

Mac and cheese:

500gmacaroni

50gunsalted butter

50gflour

1/2 tspmustard powder

1/2 tspblack pepper

600mlwhole milk

50gmozzarella, grated

50g red leicester, grated

5jalapeños, diced

250gbacon, diced

the rest:

50g plain flour

3whole eggs

4slices of white bread

mozzarella slices

Its a grilled cheese, but we've gotten ride of the bread, and replaced it with mac and cheese, and filled it with even more mac and cheese, but with bacon and jalapeños, to make this a mac and cheese lover's dream!

Method

Get ready to make a lot of mac and cheese! Start boiling your macaroni according to the packet instructions, and in a separate saucepan we'll make our béchamel.

On medium heat, add your butter. Once bubbling add the flour, and whisk till you form a paste, before adding the spices. After a couple of minutes, start adding room temperature milk, a bit at a time, whisking out any lumps each time.

Once all the milk has been added add the cheese, and then the cooked macaroni.

Take half the mixture and pour onto a tray, pat down, and place in the freezer to completely harden. To the rest, add the jalapeños and bacon. This will be out grilled cheese filling!

After 10 minutes, or when the mac and cheese in the freezer is cold, take a knife and mark out the size of our bread slices. Place back in the freezer to completely harden.

Once hard, break apart the slices of mac and cheese, cover in flour, then egg, then breadcrumbs. Make the breadcrumbs but blending bread in a food processor till fine! Fry these at 175°c until golden and crispy.

To assemble this beauty, take once crispy mac and cheese slice, top it with mozzarella slices, the jalapeños bacon mac and cheese, and more cheese, before putting it in the oven till oozy and melted. Top with another slice of mac and cheese, and enjoy!
