Baked Feta Toast

Inspired by one of the biggest viral recipes of the past year, this viral baked feta pasta inspired toast is a real winning lunch.

Ingredients

For the baked feta sauce

350gripe cherry tomatoes

4garlic cloves

170gvegan feta

2 tbspolive oil

1 tspbrown sugar

2 tspbalsamic vinegar

3strips of lemon rind

2basil sprigs

to tastecracked black pepper

To serve

2-4sourdough slices

to garnishbasil, leaves

Method

Preheat oven to 200 degrees/180 fan.

Place the tomatoes, garlic and feta into a baking dish. Season with the rest of the ingredients, flipping the feta to coat both sides in the seasonings. Bake for around 30 mins until the tomatoes have burst and the garlic cloves are soft.

Toast the sourdough then generously spread on the baked feta. Squash the tomatoes slightly then load them onto the toast. Drizzle over some of the cooking liquid and top with some lemon zest, basil leaves and black pepper. Devour and enjoy.
