Spicy Vodka Moules Frites Recipe

Twisted’s Spicy Vodka Moules Frites Recipe will certainly spice up your moules frites game. We’ve given it a twist, with added vodka and n’duja paste, this french classic just got better!

Ingredients

for the mussels:

3 tbspbutter, unsalted

2shallots, diced

4garlic, diced

1 tspsalt

2Calabrian chillies

3 tbspn'duja paste

2 x 400g tinplum tomatoes

100ml vodka

1.5kgmussels, cleaned

6 tbspaioli, to serve

3 tbspchives, diced

We love a twist on a classic! These Spicy Vodka Moules Frites are unbelievably good, you'll want to make them over and over. With n'duja paste to bring that punchy spice and a Italian American style tomato vodka sauce, you cant go wrong! Serve the whole thing with loads of fries and a creamy aioli

Method

In a large stock pot, add in your butter, allow to melt and then add diced shallots, garlic and salt. Fry on medium heat, until the shallots go from translucent to slightly brown and caramelised.

Add in the Calabrian chillies and n'duja paste. Cook for 2-3 mins until the n'duja has broken down slightly. Pour in the plum tomatoes followed by the vodka. Break up the plum tomatoes with your wooded spoon to create a smoother sauce. Season with salt and pepper and allow to simmer for 15 mins.

Once the sauce has reduced and thickened, carefully drop in your cleaned mussels. Toss in the sauce and then cover to allow to steam. Steam the mussels for 5-7 mins or until all the shells have opened up.

Once cooked, place on a large platter or bowl, garnish with aioli and chives and serve with piping hot chips!
