Chicken Tikka Subs

Ingredients

What you'll need:

1chicken breast

a cupyoghurt

1 tsp of eachgrated garlic and ginger

2 tbsptandoori masala

1 tbspsea salt

1 lemonlemon juice

2brioche hot dog buns

to servecucumber raita

to servemango chutney

to servechopped red onion

to servecoriander

Tasty chicken tikka subs.

Method

Dice the chicken breast into 3cm chunks.

Whisk the yoghurt, ginger and garlic, tandoori masala, lemon juice and salt. Marinade the chicken pieces, covered, for around an hour at room temperature.

Skewer the chicken pieces and grill until cooked through and nicely charred all over.

Toast the rolls and build the sandwiches - cucumber raita, mango chutney, chopped onion, coriander and the cooked chicken. Squeeze a bit of lemon or lime over the chicken.
