Chocolate Chip Banana Buttermilk Pancakes Recipe

Ingredients

What you'll need:

280g Co-op plain white flour

4 tbspTate & Lyle fairtrade granulated sugar

2 tsp Co-op baking powder

1 tsp Co-op bicarbonate of soda

1/2 tspsalt

440ml buttermilk

2 Co-op fairtrade bananas, mashed

2eggs, whisked

2 tsp vanilla extract,

100gCo-op chocolate chips

50g Co-op unsalted butter

Method

Whisk together flour, sugar, raising agents and salt. 

In a separate bowl whisk the buttermilk, banana, egg and vanilla extract.

Gradually pour the wet ingredients into the dry, whisking all the while, until you have a smooth batter. Stir through the chocolate chips. 

Heat the butter in a non stick frying pan. Add ? ? of the batter to a frying pan and fry, flipping hallway.

Repeat with the rest of the batter. Freeze any extra pancakes - you can thaw them and pan fry them on a later date!

Serve with banana slices and extra chocolate chips.
